Irresistible Peanut Butter Cookie

1/2 cup (1/2 stick) butter flavored Crisco shortening
3/4 cup creamy peanut butter
1 1/4 cups brown sugar, firmly packed
3 tbsp. Milk
1 tbsp. Vanilla
1 egg
1 3/4 cup all purpose flour
3/4 tsp. Salt
3/4 tsp. baking soda

Heat oven to 375. Combine peanut butter, shortening, brown sugar, milk and vanilla in a large mixing bowl. Beat at medium speed until well blended. Add egg and beat just until blended. Combine flour, salt and baking soda. Add to creamed mixture at low speed. Mix just until blended. Drop by heaping teaspoon 2 apart on a cookie sheet lined with parchment paper. Flatten slightly in a crisscross pattern with tines of fork. Bake for 8 -10 minutes. Allow cooling for two minutes on cookie sheet before removing to finish cooling. Makes 3 dozen.
