Favorite Tea Cakes

1/2 cup butter or margarine, softened
1 cup sugar
1 egg
1 tsp. vanilla extract
1 tsp. grated lemon rind

2 3/4 cups all purpose flour
1/2 tsp. baking soda
1/2 tsp. salt
1/4 cup buttermilk

Cream butter; gradually add 1 cup sugar, beating well at medium speed of electric mixer.  Add egg, vanilla and lemon rind; beat well.  Combine flour, soda and salt in a medium bowl; add to creamed mixture alternately with buttermilk, beginning and ending with flour mixture. Cover dough and refrigerate at least 2 hours. Roll dough to 1/4 thickness on a lightly floured surface. Cut with 2 cookie cutter. Sprinkle with sugar. Bake 6-8 minutes or until edges are lightly brown in preheated oven at 375 on a cookie sheet lined with parchment paper. Makes 3 1/2 dozen
