Chunky Macadamia Chip Cookies

1 cup packed brown sugar
cup butter or margarine, softened
1/ 2 cup granulated sugar
cup shortening
2 eggs
1 tsp. vanilla
3 cups flour
1 cup coconut
1 tsp. baking soda
tsp. salt
cup macadamia nuts chopped
cup chopped white baking pieces or chips
cup milk chocolate chips


Combine sugar, butter, shortening, eggs and vanilla. Beat at medium speed until light and fluffy. Add flour, coconut, baking soda and salt. Beat at low speed until soft dough forms. Stir in nuts and chips. Bake on parchment paper lined cookie sheet for 11-13 minutes at 350.

NOTE: I usually use all white chips and not milk chocolate.
